Quick and Easy Rice Cooker Frittata

Who says a rice cooker is only for making the perfect rice? I’ve used mine for a variety of delicious dishes, including all sorts of rice, quinoa, oatmeal, lentil soup, and now a frittata.

These handy little appliances are reasonably priced (since I don’t go for the high end ones that have more bells and whistles), so I have a couple of them sitting side by side on my kitchen counter. The little one is perfect for single and sometimes double servings, while the larger one can cook enough for 4-6 people.

This morning, my husband and I both slept a little later than usual so we wouldn’t doze off before the ball drops tonight. Yeah, that’s happened a few times—actually more times than not—over the past 36 years we’ve been married.

I figured it would be fitting to have something with more oomph than our typical bowl of oatmeal, so I decided to try cooking a rice cooker frittata. All I have to do is load the ingredients, press the button, and wait for it to shut off.

Rice Cooker Frittata Recipe

The foundation for the frittata is eggs, and the rest is up to you. I like to use this opportunity to add veggies for an extra boost of nutrition. My rice cookers are nonstick, but if yours isn’t, don’t forget to spray nonstick cooking spray before you add your ingredients.

  • 4 eggs
  • 2 Tablespoons whole milk
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped onions
  • 1/4 cup diced tomatoes
  • 1/4 cup diced ham
  • 1/2 cup shredded cheese
  • Salt and course-ground pepper (optional)

  1. Beat the eggs with the milk. Add salt and pepper to taste.
  2. Pour the eggs and milk mixture into the rice cooker.
  3. Sprinkle the pepper, onions, tomatoes, and ham over the eggs. 
  4. Sprinkle the cheese over the top.
  5. Put on the lid, plug it in, and press the ON button. When it finishes cooking, somehow the machine knows to go into warming mode. If it isn't finished cooking, you can run it through another full or partial cycle.

All done! Now all I have to
do is slice and serve it!

This is the perfect amount for two people. I’m serving it with gluten-free toast and fig preserves … and of course coffee.

There's a reason Summerville has the nickname Flowertown. There are flowers everywhere, and they seem to do better here than anywhere else I've ever lived--besides Hawaii, of course. Last spring, I purchased a bunch of healthy looking flowers and vegetables, and while I was at it, I picked up some withered dianthus from the clearance cart at Lowe's.

Fast forward a year, and this is what they look like now. All they needed was a good home, lots of sun, and just enough water.

Since I enjoy changing the color scheme in my garden each year, I'll switch out white vinca with yellow marigolds for a completely different look, depending on what I'm in the mood for.

We also picked up a hydrangea. It was pink at the store, but it turned a soft purple when we planted it in the front yard. Unfortunately, it got too much sun there, so I had to move it to a shady spot in the backyard where it took on this very bold blue hue. It's now my favorite flower ever!

My vegetable garden is also doing well. All I have this year are tomatoes, cucumbers, and bell peppers. I should have gotten some green bean plants, but we had so many beans last year I got tired of them.
